This recipe makes a large batch, but with so many ways to use it, it won’t last long. The number of dates needed will depend on the variety you use. 350 grams of dates is the minimum quantity you can use for this recipe, anything less will not blend. If you’re using Medjool dates, you’ll first need to remove the pits. To do so, just pull the date in half by hand and remove the pits.
You can store homemade date paste in the refrigerator for up to a month. Glass jars with tight fitting lids are the best option because they are airtight and do not absorb flavours or odours. To enjoy your delicious homemade date paste for as long as possible, store it in a Luvele Fresh glass vacuum container.
350 grams (or more) dates
1. Whichever dates you choose to use, cut them in half so they soften quicker and blend more easily.
2. Place the chopped dates in a bowl and cover with 1 cup of boiling water.
3. Leave soak until softened. Approx 10 minutes for Medjool and 30 minutes for 4. cooking dates.
5. Drain the water from the dates reserving the soaking water to use to adjust the paste consistency when blending.
6. Transfer the drained dates to the Vibe Blender jug.
7. Add 1/4 of a cup of the soaking water.
8. Remove the filler cap and insert the tamper into the blender jug lid.
9. Blend on ‘nut’ mode for 50 seconds. Stop to scrape down the sides and under the blender blades.
10. If the date mixture is too thick, add more soaking water by a tablespoon at a time until you get the desired consistency. You want a concentrated paste so don’t add too much water in one go.
11. Continue to blend for another minute or until the paste is smooth and fibre free.
12. Scoop the paste out into an airtight glass container and store in the fridge for up to 1 month or freeze for up to a year.
